Hi all! This is Kate Richards celebrating the Summer
Solstice and the start of what promises to be a very warm summer here in
Southern California. Unlike a lot of the country, we usually don’t get hot
until after the 4th of July, here in Los Angeles…even if we do get
some 90 plus spells in January. But this
year we’ve hit hard and fast and I have already kicked into “keep the huskies
cool mode.” My girlies are sixteen years old and their fur coats are not
conducive to such hot days.
But they still nobly hang out with me, or at least take
turns in the office while I work on some of the fun projects I’m working on
this season. One of them is an expansion of my story in the USA Today
Bestseller, Hero to Obey. I’m so excited to delve deeper into the surprising
connection between a Cold War Coast Guard Captain and a Soviet scientist as
they follow the trail of a mythological beast in the cold waters off Alaska.
I hope you're enjoying the warm weather and I wanted to share a recipe for keeping cool. Homemade ice cream! My favorite ice cream recipe is the simplest ever. You simply take one quart of half and half, a can of condensed milk, and a teaspoon of vanilla extract. Combine these ingredients in any kind of ice cream freezer along with all sorts of add ins. We love fresh peaches at this time of year, but chocolate chips are also a terrific choice.
Another way to make great ice cream is the Mason jar technique. Perfect if you don't have an ice cream freezer or just want a few scoops for dinner. A cup of heavy cream, sugar to taste, flavorings...shake five minutes and freeze until firm.

ReplyDeleteWonderful recipe! I'll have to try the mason jar one. I don't have an ice cream maker but I do have a mason jar! I would add cherries. Right now they are in season and would be a perfect choice!

ReplyDeleteI'm hoping to get lots of new ideas too! One of the awesome things about ice cream is it can be done sugar free for those of us with loved ones whose dietary needs require that! I'm making chocolate chocolate chip as soon as the sugar free chocolate chips get here!
